Ingredients
- 1 can chickpeas, 15 oz, drained and rinsed
- 1 medium zucchini, cut into half-moons
- 1 red bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges
- 2 cups baby spinach
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 2 tablespoons tahini
- 1 lemon
- 2 tablespoons warm water, plus more as needed
- 1/2 teaspoon kosher salt
Cooking steps
- 1Heat the oven to 425°F (220°C). Pat the chickpeas dry so they roast instead of steam.
- 2Spread the chickpeas, zucchini, bell pepper, and onion on a large rimmed sheet pan. Add olive oil, cumin, smoked paprika, and salt, then toss until evenly coated.
- 3Roast for 20 to 25 minutes, stirring once halfway through, until the vegetables are tender with browned edges and the chickpeas are lightly crisp.
- 4While the vegetables roast, whisk the tahini with 2 tablespoons lemon juice and 2 tablespoons warm water. Add more water a teaspoon at a time until the sauce is pourable.
- 5Divide the spinach between two bowls. Top with the hot roasted chickpeas and vegetables so the spinach softens slightly.
- 6Drizzle with the lemon tahini sauce, taste, and add an extra squeeze of lemon or pinch of salt if needed. Serve while warm.
Useful substitutions
- Replace spinach with chopped kale and massage it briefly with a little lemon juice.
- Use white beans when chickpeas are unavailable; roast gently because they are softer.
- Sunflower seed butter can replace tahini for people avoiding sesame, but always check the product label.
